Brewing up some Beer Treats

After the beer cake making adventure that wasn't a total success, local Chef and personal friend Charlotte offered to show us how to make some unique and delicious beer infused treats!

Green Apple, Ginger and Lime Lager Glacée


Ingredients:

3 Granny Smith apples
2 Limes
1 Medium piece of ginger, peeled
1/2 cup sugar
1/2 bottle 1664 Lager (or any lager of your choice, orignally this recipe used Corona, but we made a summer French treat)
1/2 tray of ice cubes
Water as needed

1. Cut apples in to manageable pieces and place in blender along with ginger, juice of one lime, sugar and ice. Blend ingredients until smooth but green apple peel pieces still linger. 

2. Add beer and lightly blend. 

3. Place into container and freeze

4. Once frozen all the way through, remove from freezer to re-blend, adding water until desired consistency. 

5. Garnish with lime and serve!



Chef Charlotte is a professional and doesn't believe in following recipes, as smoothly as possible I took notes, but she insisted that tasting is the only way to truly create cuisine.

Maple Brown Ale Creme Mousse




Ingredients:

1 Can 8.6 brown ale (or a nutty brown ale of your choice)
1/4 Cup maple syrup
1 Packet gelatin
2 Eggs
1 Container of creme liquid
Sugar as needed

1. Place metal mixing bowl and egg beaters in freezer to prepare to make whip cream.

2. Place beer in pot over medium heat and reduce for about 30 minutes or until a dark brown, nutty liquid. Stir occasionally to down size foam.

3. Place two sheets of gelatin in cold water. Once soft, add gelatin to heated beer and warm, mixing thoroughly. Add 1/4 cup creme.

4. Add maple syrup to reduced beer.

5. Beat two eggs and slowly add beer reduction.

6. Make whip cream: add creme liquid with sugar in frozen metal bowl and beat until firmed.

7. Gently fold whip cream with beer reduction.

8. Place in serving dishes and refrigerate until firm.

9. Garnish with red berries and/or whip cream, serve chilled.
